Clover Club Cocktail Recipe

The Clover Club is a pre-Prohibition classic that beautifully blends elegance and charm. Named after a Philadelphia gentlemen’s club, this cocktail combines dry gin, raspberry syrup, lemon juice, and egg white to create a silky, fruity, and refreshing drink with a delicate pink hue and a luxurious foamy top. It’s a perfect choice for those who enjoy a balance of tart, sweet, and botanical flavors in a visually stunning presentation.

Ingredients:

  • 1.5 oz Dry Gin
  • 0.75 oz Fresh Lemon Juice
  • 0.5 oz Raspberry Syrup (or grenadine, in a pinch)
  • 0.5 oz Egg White (or aquafaba for a vegan version)
  • Fresh raspberry or lemon twist (optional garnish)

Instructions:

Dry shake (without ice)

In a shaker, combine:

  • 1.5 oz Dry Gin
  • 0.75 oz Fresh Lemon Juice
  • 0.5 oz Raspberry Syrup
  • 0.5 oz Egg White
    Shake vigorously for about 10 seconds to emulsify the egg white and build foam.

Shake again with ice

Add ice to the shaker and shake again for another 10–15 seconds until well chilled.

Strain

Double strain the cocktail into a chilled coupe glass to achieve a smooth, foamy texture.

Garnish (optional)

Garnish with a fresh raspberry, a lemon twist, or leave it unadorned to admire the foamy top.
