The Bellini is a classic Italian cocktail that exudes elegance and simplicity. Originating in Venice in the 1940s, this sparkling drink is a delightful blend of ripe white peach purée and dry prosecco. Light, fruity, and refreshingly bubbly, the Bellini is perfect for brunches, celebrations, or warm afternoons when you want something sophisticated yet easygoing. Its natural sweetness and effervescence make it a favorite among sparkling wine lovers.

Ingredients (per serving):

  • 2 oz White peach purée (fresh or high-quality bottled)
  • 4 oz Chilled prosecco (dry sparkling wine)
  • Optional: 0.25 oz simple syrup (for added sweetness, if needed)
  • Garnish: Peach slice (optional)

Instructions:

Prepare the peach purée:

If using fresh peaches, peel and pit them, then blend until smooth. Strain for a silkier texture. Chill before using.

Add purée to glass:

Pour 2 oz white peach purée into a chilled Champagne flute.

Top with prosecco:

Slowly pour 4 oz chilled prosecco over the purée. Pour gently to avoid too much foaming.

Stir gently (optional):

Lightly stir to combine, being careful not to lose the bubbles. Some prefer to leave it slightly layered for visual appeal.

Garnish and serve:

Garnish with a thin peach slice on the rim of the glass, if desired. Serve immediately while cold and bubbly.
