The full guide to Hillrock Estate Distillery
Hillrock Estate Distillery sits on an estate in Ancram, in the Hudson Valley. It grows its own rye and barley, malts the grain on the property in a traditional floor malting house and distils it on site, which makes it one of the few true field-to-glass whiskey makers in America.
The signature whiskey is a solera-aged bourbon, in which whiskey from older barrels is blended with younger whiskey through a system of rotating casks, a method borrowed from sherry and brandy making.
The distillery was set up with the help of master distiller Dave Pickerell, who also worked at Maker’s Mark.
Thomas Grønvold is the founder of Caskable and a whisky enthusiast who believes the best way to learn about whisky is simply to drink it, compare it, and stay curious. From supermarket favourites to bottles from distilleries around the world, he writes about what he actually tastes and experiences, without pretending you need to be an expert to enjoy a good dram.
